In the Mykolaiv region, Rokada continues providing new professional training for willing participants

In the Novyi Buh Resilience Hub Community Heart, Rokada united willing participants for a free professional course on safe and healthy nutrition in educational institutions. The training lasted 30 hours. Fifteen female residents of the community took part in it.

“In particular, employees of school cafeterias and kindergartens joined the training. For each of them, it is not only an opportunity to improve their qualifications. It is primarily about the daily responsibility for what a child receives on their plate – healthy and delicious food. That is why during the course it was important to combine practice and general knowledge, understanding of current state regulations and requirements regarding healthy child nutrition, – explains Evgeniia Boikova, the education and training manager of Rokada regional office, and adds that the course is based on the HACCP food safety management system, which controls all stages: from raw material to consumption. – This system helps cooks working in educational institutions’ cafeterias prevent biological, chemical, and physical risks in food.”

The course consisted of 5 hours of theoretical and 25 hours of practical training. The participants worked with a modern four-week menu and practiced preparing two dozen dishes.

“We prepared delicious and healthy lunches with less salt and sugar, using allowed spices, dry herbs, and berry sauces. We also practiced gluten-free and dietary menus for preschoolers and schoolchildren with special dietary needs. And with the help of a modern combi steamer, we mastered the steam, convection, and combined cooking modes, which allow preserving the nutritional properties of products,” – says Olha Bilyk, a cook at the local gymnasium.

In total, this is already the 16th educational course in the Novyi Buh Hub. During half a year, 158 willing participants acquired new professions.

Currently, advanced training in 3D printing and modeling is ongoing in the Community Heart. And soon an SMM course will start.
